Yams with Pears and Pecans
2 lbs. yams (or sweet potatoes)
¾ cup or less firmly packed brown
sugar
½ stick margarine
¾ cup cubed pears
½ cup chopped pecans
1 teaspoon nutmeg
1 teaspoon cloves
1 teaspoon cinnamon
Peel yams and cut into ¾ inch cubes. Place in saucepan with water to cover. Bring to boil. Boil until tender. Drain, but reserve 1 c. of cooking liquid. Place yams in 11 x 7 baking dish. In saucepan, combine liquid, brown sugar, margarine, pears, pecans, and spices. Bring to a boil and cook until syrupy. Pour over yams and bake 45 minutes at 350° F.
Serves 8-10.
