Scrambled Tofu
2 teaspoons oil
2 green onions, chopped (including tops)
1 cup firm tofu, crumbled
¼ teaspoon turmeric
¼ teaspoon garlic powder
⅛ teaspoon ground cumin
⅛ teaspoon black pepper
1 teaspoon soy sauce
Heat the oil in a skillet and sauté the green onions for 3 minutes. Add the remaining ingredients and cook 3 to 5 minutes longer.
Serves 2 to 3.
