Mandarin Orange Salad
Chopped romaine and/or green lettuce
Diced celery (maybe 1 cup?)
1-2 small cans mandarin oranges, drained and chilled
Dressing:
Vegetable oil & white vinegar (I think about a 3:1
or 2:1 ratio)
A few drops hot sauce (they usually label it Cajun or Louisiana; I think Tabasco
might be too spicy)
A few sprigs chopped parsley (maybe 1/4 cup?)
optional: poppy seeds
Mix dressing thoroughly until viscous (parsley should be in suspension) and chill before using.
Spinach and Pear Salad
Baby spinach or well-cleaned regular, stems removed
1-2 pears, either in chunks or thin small slices
Either feta cheese or crumbled blue (feta is milder)
Pecans -- If you have time, you can season these by heating in a saucepan with
butter a little salt, pepper, sugar & cayenne to taste. You can do a bunch of
these beforehand and keep them for later use.
Dressing: Creamy poppy seed dressing -- buy off the shelf
