Chana Masala

1½ cups chick peas
2 teaspoons minced garlic
1¼ cups chopped onions
3 medium tomatoes, chopped
2 fresh green chilies, seeded and chopped
1/3 cup vegetable oil
1 tablespoon ground coriander
1 tablespoon cumin
1½ tsp garam masala
¾ teaspoon turmeric
1½ teaspoons salt
½ teaspoon pepper
1 tablespoon lemon juice
fresh coriander (cilantro)

Wash chick peas, drain and soak in cold water (if the dried kind). Drain and boil in plenty of salted water with half the garlic until tender. Sauté remaining garlic with onions and chilies in oil until onions are soft and lightly colored. Add spices, turmeric, salt, pepper and tomatoes. Cook for 4 minutes. Add chick peas and cook for 5-6 minutes.
Stir in lemon juice and fresh coriander to taste.

This is great over rice or alone.
